Tzatziki is the simplest sauce there is, and it still usually turns watery. The trick: salt the cucumber and squeeze it out before it meets the yoghurt.

- 300 gGreek yoghurt, 0% fat
- 200 gCucumber
- 10 gOlive oil (1 tbsp)
- Garlic, dill, salt, pepper, lemon
How to make it
- Coarsely grate the cucumber, salt it, leave it for ten minutes, then squeeze it out hard in a cloth.
- Stir with the yoghurt, crushed garlic, chopped dill, oil, lemon, salt and pepper.
- Chill for 30 minutes.
One tip
One clove of garlic is enough for the whole bowl. Tzatziki gets sharper overnight, not milder.
