Tzatziki is the simplest sauce there is, and it still usually turns watery. The trick: salt the cucumber and squeeze it out before it meets the yoghurt.

Ingredients

  • 300 gGreek yoghurt, 0% fat
  • 200 gCucumber
  • 10 gOlive oil (1 tbsp)
  • Garlic, dill, salt, pepper, lemon

How to make it

  1. Coarsely grate the cucumber, salt it, leave it for ten minutes, then squeeze it out hard in a cloth.
  2. Stir with the yoghurt, crushed garlic, chopped dill, oil, lemon, salt and pepper.
  3. Chill for 30 minutes.

One tip

One clove of garlic is enough for the whole bowl. Tzatziki gets sharper overnight, not milder.
