The wedding in the name is the one between meat and greens, not between two people. An Italian-American soup that is above all one thing: a pot full of tiny meatballs.

  • 50 gEgg (1 piece)
  • 30 gwhite breadcrumbs
  • 30 gParmesan, grated
  • 200 gSpinach
  • 150 gCarrots
  • 80 gCelery
  • 100 gOnion
  • 120 gSoup noodles
  • 1500 mlChicken stock
  • Parsley, garlic, salt, pepper

How to make it

  1. Mix the mince with the egg, breadcrumbs, half the Parmesan, parsley, garlic, salt and pepper and roll hazelnut-sized balls.
  2. Cook the finely diced onion, carrots and celery in the broth for ten minutes.
  3. Add the meatballs and pasta and simmer for ten minutes, the spinach for the last minute.
  4. Serve with the rest of the Parmesan.

One tip

Keep the balls small. They should fit on the spoon.
