In Korea this is the stew for cold days and old kimchi. The riper the kimchi, the better the soup. The silken tofu goes in last and stays in big soft pieces.

- 300 gSilken tofu
- 150 gPork fillet
- 10 gSesame oil (1 tbsp)
- 15 gSoy sauce (1 tbsp)
- 15 gHot chilli sauce (1 tbsp)
- 40 gSpring onion
- 500 mlVegetable stock
- 100 gRice, raw
- Garlic, sugar
How to make it
- Cook the rice. Fry the pork strips in the sesame oil, add the kimchi and garlic and fry for five minutes.
- Add the stock, soy sauce, chilli sauce and a pinch of sugar and simmer for fifteen minutes.
- Lay the tofu in in big pieces, let it stand for five minutes, serve with spring onion and the rice.
One tip
The kimchi juice from the jar goes in the pot too. It is half the seasoning.
