Young jackfruit from a tin falls into strands like pulled pork as it fries. With tomato purée, smoked paprika and soy sauce it tastes savoury, even though it is a fruit.

- 250 gTinned jackfruit, drained
- 75 gCorn tortillas (3 piece)
- 15 gTomato purée (1 tbsp)
- 10 gSoy sauce (2 tsp)
- 60 gRed onion
- 30 gSalad leaves
- 10 gCanola oil (1 tbsp)
- 10 gLime
- Smoked paprika, cumin, garlic, chilli, coriander, salt
- 50 gAvocado (½ piece)
- 10 gJalapeño
How to make it
- Rinse the jackfruit, remove the hard cores, pull it apart with your hands.
- Soften half the onion and the garlic in the oil, add the jackfruit, tomato purée, soy sauce, paprika, cumin and chilli, fry with 50 ml of water for ten minutes until stringy and slightly crisp.
- Warm the tortillas, fill them with salad and jackfruit, the rest of the onion, coriander and lime on top.
- Avocado wedges and jalapeño rings on the tacos.
One tip
Jackfruit has almost no protein. Add black beans and the taco becomes a meal.
