The French left the baguette in Vietnam, and the filling is Vietnamese: sweet-sour pickled vegetables, plenty of coriander, chilli and meat with hoisin.

- 150 gChicken breast
- 50 gCarrot
- 50 gCucumber
- 10 gVinegar (2 tsp)
- 5 gSugar (1 tsp)
- 10 gJalapeño
- 15 gMayonnaise (1 tbsp)
- 10 gHoisin sauce (2 tsp)
- 10 gSoy sauce (2 tsp)
- 5 gCanola oil (1 tsp)
- Coriander, lime
How to make it
- Cut the carrot and cucumber into fine matchsticks and pickle them in the vinegar, sugar and a pinch of salt for ten minutes.
- Fry the sliced chicken with the soy sauce and hoisin in the oil for four minutes a side.
- Split the baguette, spread it with mayonnaise, fill with the chicken, vegetables, jalapeño and coriander, lime over it.
One tip
The baguette must be crisp outside and airy inside. A soft roll is not a bánh mì.
