The Reuben is the sandwich of the New York delis: warm, heavy, with sauerkraut and melted cheese. You eat it with both hands and a napkin within reach.

- 80 gRye bread (2 slices)
- 100 gCorned beef
- 60 gSauerkraut, squeezed dry
- 40 gEmmental (2 slices)
- 15 gMayonnaise (1 tbsp)
- 10 gKetchup (2 tsp)
- 20 gGherkins, chopped
- 10 gButter
- Pepper
How to make it
- Stir the mayonnaise, ketchup and pickles into a dressing and spread it on both slices.
- Layer the corned beef, sauerkraut and cheese in between and close it.
- Butter the outside and fry over medium heat for four minutes a side, until the cheese runs.
One tip
Squeeze the sauerkraut out well. Wet kraut turns the bread soggy.
