Young jackfruit from a tin has strands like braised meat and tastes of nothing. Both are advantages here: it takes on the barbecue sauce and becomes pulled pork without the pork.
Ingredients
Forservings
- 400 gJackfruit, tinned, drained
- 60 gBBQ sauce (4 tbsp)
- 60 gOnion
- 10 gCanola oil (1 tbsp)
- 120 gWholemeal roll (2 piece)
- 100 gWhite cabbage
- 50 gCarrot
- 10 gOlive oil (1 tbsp)
- 10 gVinegar (2 tsp)
- Paprika, cumin, garlic, salt, pepper
How to make it
- Rinse the jackfruit, remove the hard cores, pull it apart with a fork.
- Fry the onion and garlic in the rapeseed oil, add the jackfruit, spices and barbecue sauce, braise for twenty minutes until stringy.
- Finely shred the cabbage and carrot and mix with the olive oil, vinegar, salt and pepper.
- Toast the buns and fill them with the jackfruit and slaw.
One tip
Fry it uncovered at the end and the strands get roasted edges.
