Smoked tofu brings what the meat usually brings: salt, smoke, bite. With the sweet-sour vegetables and plenty of coriander, this is a sandwich nobody misses anything in.

  • 90 gBaguette (1 piece)
  • 150 gSmoked tofu
  • 30 gSpinach
  • 50 gCarrot
  • 50 gCucumber
  • 10 gVinegar (2 tsp)
  • 5 gSugar (1 tsp)
  • 10 gSoy sauce (2 tsp)
  • 10 gSriracha (2 tsp)
  • 10 gCanola oil (1 tbsp)
  • Coriander, lime

How to make it

  1. Cut the carrot and cucumber into matchsticks and pickle them in the vinegar, sugar and salt for ten minutes.
  2. Fry the sliced tofu crisp in the oil and deglaze with the soy sauce.
  3. Split the baguette, spread it with sriracha, fill with the spinach, tofu, vegetables and coriander, lime over it.

One tip

For something creamier, use vegan mayonnaise instead of the sriracha, or both.
