Small balls, brown sauce, mash, a spoon of lingonberry: in Sweden this is everyday food. The soaked bread makes the balls light and the cream makes the sauce.

  • 200 gMinced pork
  • 80 gOnion
  • 40 gWhite bread (1 slice)
  • 80 mlMilk, for the bread
  • 50 gEgg (1 piece)
  • 40 gButter
  • 15 gPlain flour (1 tbsp)
  • 300 mlBeef stock
  • 100 mlDouble cream
  • 800 gPotatoes
  • 100 mlMilk, for the mash
  • Allspice, nutmeg, salt, pepper, cranberry sauce to serve

How to make it

  1. Soak the bread in the milk, knead with the mince, finely diced onion, egg, allspice, salt and pepper, roll walnut-sized balls.
  2. Boil the potatoes for twenty minutes and mash with the milk, half the butter and the nutmeg.
  3. Fry the balls brown all over in the rest of the butter, take them out, soften the flour in the pan fat, deglaze with the stock.
  4. Add the cream, reduce for five minutes, balls back in, serve with the mash and lingonberries.

One tip

Roll them with wet hands and nothing sticks.
