Tuna is seared only on the outside, one minute a side, and stays pink inside. The sesame protects the flesh and gives the crust. Then sliced, like a steak.

- 200 gTuna steak, fresh
- 20 gSesame seeds, white and black (2 tbsp)
- 20 gSoy sauce (1 tbsp)
- 5 gSesame oil (1 tsp)
- 5 gCanola oil (1 tsp)
- Wasabi, ginger, lime, salt
How to make it
- Pat the tuna dry, rub it with the sesame oil, salt it, roll it all over in the sesame.
- Sear in very hot rapeseed oil for one minute a side, take it out, cut it into slices.
- Serve with the soy sauce, wasabi, ginger and lime.
One tip
Sushi-grade tuna only. Inside it stays raw.
