Tuna is seared only on the outside, one minute a side, and stays pink inside. The sesame protects the flesh and gives the crust. Then sliced, like a steak.

Ingredients

  • 200 gTuna steak, fresh
  • 20 gSesame seeds, white and black (2 tbsp)
  • 20 gSoy sauce (1 tbsp)
  • 5 gSesame oil (1 tsp)
  • 5 gCanola oil (1 tsp)
  • Wasabi, ginger, lime, salt

How to make it

  1. Pat the tuna dry, rub it with the sesame oil, salt it, roll it all over in the sesame.
  2. Sear in very hot rapeseed oil for one minute a side, take it out, cut it into slices.
  3. Serve with the soy sauce, wasabi, ginger and lime.

One tip

Sushi-grade tuna only. Inside it stays raw.
