A curry that needs time: the meat braises for an hour and a half in spices and coconut milk until the sauce is dark and thick. It is worth making twice the amount.

- 150 mlCoconut milk

- 20 gCanola oil (2 tbsp)

- Ginger, garlic, garam masala, turmeric, chilli, cumin, coriander, salt
How to make it
- Fry the meat in the oil in batches and take it out. Fry the onions golden, toast the ginger, garlic and spices with them.
- Add the tomatoes and coconut milk, meat back in, braise covered for eighty minutes.
- Add the pepper strips, ten minutes more, salt it, serve with rice and coriander.
One tip
If the sauce gets too thick, add a splash of water. Too thin, lid off and reduce.
