A curry that needs time: the meat braises for an hour and a half in spices and coconut milk until the sauce is dark and thick. It is worth making twice the amount.

  • 200 gOnions
  • 200 gTomatoes, tinned
  • 150 mlCoconut milk
  • 80 gPeppers
  • 20 gCanola oil (2 tbsp)
  • 120 gRice, raw
  • Ginger, garlic, garam masala, turmeric, chilli, cumin, coriander, salt

How to make it

  1. Fry the meat in the oil in batches and take it out. Fry the onions golden, toast the ginger, garlic and spices with them.
  2. Add the tomatoes and coconut milk, meat back in, braise covered for eighty minutes.
  3. Add the pepper strips, ten minutes more, salt it, serve with rice and coriander.

One tip

If the sauce gets too thick, add a splash of water. Too thin, lid off and reduce.
