The wings turn crisp in a dry oven first, then get tossed in the reduced glaze. That keeps the skin crackling and makes the sauce cling instead of boiling away.

  • 40 gSoy sauce (3 tbsp)
  • 30 gHoney (2 tbsp)
  • 10 gVinegar (2 tsp)
  • 5 gCornflour (1 tsp)
  • 10 gSesame seeds (2 tsp)
  • Ginger, garlic, spring onion, chilli, salt

How to make it

  1. Pat the wings dry, salt them, bake on a rack at 220 degrees for forty minutes until the skin is crisp.
  2. Bring the soy sauce, honey, vinegar, ginger, garlic and chilli to the boil and thicken with the slaked cornflour.
  3. Turn the wings in the glaze and serve with sesame and spring onion.

One tip

On a rack rather than the tray, so they crisp all the way round.
