The pancake is baked in the pan, torn up and caramelised once more with sugar. The whites are beaten separately, which is why it is so airy inside.

  • 200 gEggs (4 piece)
  • 100 gPlain flour
  • 200 mlMilk
  • 40 gSugar
  • 20 gButter
  • 30 gRaisins
  • 150 gSweet cherries, pitted
  • Icing sugar, vanilla, pinch of salt

How to make it

  1. Cook the cherries with a tablespoon of sugar and a little water for five minutes and set them aside.
  2. Separate the eggs. Whisk the yolks with the flour, milk, vanilla and half the sugar, beat the whites with the salt until stiff and fold them in.
  3. Melt the butter in the pan, batter in, raisins over it, let it set over medium heat, turn it.
  4. Tear it into pieces, the rest of the sugar over it, let it caramelise briefly. Serve with icing sugar and the cherries.

One tip

Stiff egg white is the difference between a Schmarrn and a pancake.
