The crack of the sugar crust under a spoon is the entire point of this pudding. Underneath is a custard of nothing but cream, egg yolk, sugar and vanilla.

Ingredients

  • 400 mlDouble cream
  • 85 gEgg yolk (5 piece)
  • 80 gSugar
  • Vanilla pod, pinch of salt

How to make it

  1. Heat the oven to 150 degrees. Heat the cream with the seeds of the vanilla pod without boiling.
  2. Whisk the yolks with sixty grams of sugar and the salt, then stir in the warm cream slowly.
  3. Pour through a sieve into four ramekins and stand them in a dish of hot water.
  4. Bake for forty minutes until the custard only wobbles in the middle. Chill for four hours.
  5. Before serving, sprinkle with the rest of the sugar and caramelise with a blowtorch.

One tip

Without a torch: under a hot grill, door open, and stay there.
