Laksa is the soup that has everything in it: noodles, coconut milk, curry, chicken, prawns, half an egg. In Kuala Lumpur it is on every street corner, and here it needs a good curry paste.

- 150 gChicken breast
- 100 gPrawns
- 100 gTofu
- 300 mlCoconut milk
- 400 mlVegetable stock
- 100 gEggs, hard-boiled (2 piece)
- 60 gBean sprouts
- 10 gCanola oil (1 tbsp)
- 2 tbsp red curry paste, lime, coriander, soy sauce
How to make it
- Fry the curry paste in the oil for a minute, pour in the coconut milk and stock, simmer for ten minutes.
- Cook the chicken strips and diced tofu in the soup for five minutes, adding the prawns for the last two.
- Cook the noodles as the packet says, divide them between bowls, soup over them.
- Serve with the halved eggs, sprouts, coriander and lime.
One tip
The heat comes from the paste. Two spoons is medium, three is Malaysia.
