Folding wontons is handwork, and after the first five it goes fast. The filling is pork mince with prawns, ginger and spring onion, and the broth stays clear.

- 80 gPrawns, chopped
- 40 gSpring onion
- 15 gSoy sauce (1 tbsp)
- 5 gSesame oil (1 tsp)
- 150 gPak choi
- 800 mlChicken stock
- Ginger, white pepper, salt
How to make it
- Knead the mince, prawns, half the spring onion, ginger, soy sauce, sesame oil and pepper into a filling.
- A teaspoon of filling on each wrapper, moisten the edges, fold into a triangle, press the corners together.
- Bring the broth to the boil and let the wontons cook for five minutes, until they float.
- Add the pak choi for the last two minutes and serve with the rest of the spring onion.
One tip
Wontons freeze raw and go into the broth straight from frozen.
