Miso soup is hot water with miso paste, tofu and seaweed. It is ready in the time the kettle takes, and it fills you up without sitting heavy.

- 20 gMiso paste (1 tbsp)
- 100 gtofu, soft or firm
- 5 gWakame, dried
- 20 gSpring onion
- 350 ml water
How to make it
- Soak the wakame in a little water for five minutes. Dice the tofu, slice the spring onion.
- Bring the water to the boil and take it off the heat. Stir the miso smooth in a ladle with a little hot water, then into the pot.
- Add the tofu and wakame, leave for two minutes, spring onion over the top.
One tip
Miso goes into hot water, not boiling water. Boiled, it loses its aroma and turns bitter.
