Orzo looks like rice and is pasta. As a salad it is what you take to a barbecue and what is even better from the fridge the next day.
Ingredients
Forservings
- 150 gOrzo
- 80 gFeta
- 150 gCherry tomatoes
- 100 gCucumber
- 80 gPeppers
- 40 gBlack olives
- 20 gOlive oil (2 tbsp)
- 15 gLemon juice (1 tbsp)
- Parsley, oregano, salt, pepper
How to make it
- Cook the orzo in salted water until firm to the bite, drain, mix with the oil and let it cool.
- Halve the tomatoes, dice the cucumber and pepper, halve the olives, mix it all into the orzo with the lemon, oregano and parsley.
- Crumble the feta over and season.
One tip
The salad draws liquid. Freshen it up with oil and lemon again before serving.
