Orzo looks like rice and is pasta. As a salad it is what you take to a barbecue and what is even better from the fridge the next day.

Ingredients

  • 150 gOrzo
  • 80 gFeta
  • 150 gCherry tomatoes
  • 100 gCucumber
  • 80 gPeppers
  • 40 gBlack olives
  • 20 gOlive oil (2 tbsp)
  • 15 gLemon juice (1 tbsp)
  • Parsley, oregano, salt, pepper

How to make it

  1. Cook the orzo in salted water until firm to the bite, drain, mix with the oil and let it cool.
  2. Halve the tomatoes, dice the cucumber and pepper, halve the olives, mix it all into the orzo with the lemon, oregano and parsley.
  3. Crumble the feta over and season.

One tip

The salad draws liquid. Freshen it up with oil and lemon again before serving.
