Invented at the Waldorf hotel in New York, originally with nothing but apple, celery and mayonnaise. The walnuts came later, and the yoghurt makes it lighter today.

How to make it
- Cut the apple and celery into small dice, halve the grapes, roughly chop the walnuts.
- Whisk the yoghurt, mayonnaise, lemon, salt and pepper, turn everything in it, arrange on salad leaves.
One tip
The apple keeps its skin, or the colour is missing.
