Stale bread, ripe tomatoes, oil and vinegar: panzanella is a salad that has to stand for half an hour so the bread drinks the tomato juice. In high summer there is nothing better.

- 400 gRipe tomatoes
- 150 gCucumber
- 50 gRed onion
- 30 gOlive oil (3 tbsp)
- 15 gRed wine vinegar (1 tbsp)
- 10 gCapers (1 tbsp)
- Basil, salt, pepper
How to make it
- Tear the bread into pieces and toast it briefly. Roughly cut the tomatoes, dice the cucumber, slice the onion into fine rings.
- Mix everything with the oil, vinegar, capers, salt and pepper, leave for thirty minutes, basil last.
One tip
Only with properly ripe tomatoes. Otherwise the juice that makes the salad is missing.
