In Italy this salad is made with tinned tuna. With freshly fried salmon it becomes a dinner that tastes best lukewarm.

- 250 gSalmon fillet
- 240 gWhite beans, drained (1 tin)
- 60 gRed onion
- 20 gLemon juice (1 tbsp)
- 20 gOlive oil (2 tbsp)
- 10 gCapers (1 tbsp)
- Parsley, salt, pepper
How to make it
- Fry the salmon in the pan with half the oil for four minutes a side, cool it, pull it into pieces.
- Mix the beans, finely sliced onion, capers and parsley with the rest of the oil, the lemon, salt and pepper, fold in the salmon.
One tip
Let the onion sit in the lemon for five minutes and it turns milder.
