Panna cotta means cooked cream, and that is all it is: cream, milk, sugar, vanilla, a little gelatine. The art is using so little gelatine that it only just stands up.

- 200 mlMilk
- 50 gSugar
- 8 gGelatine, ground
- 200 gStrawberries
- Vanilla pod, lemon juice
How to make it
- Soak the gelatine in a little cold water.
- Heat the cream, milk, forty grams of sugar and the seeds of the vanilla pod without boiling.
- Squeeze out the gelatine, dissolve it in the warm cream, pour into glasses, chill for four hours.
- Blend the strawberries with the rest of the sugar and the lemon juice and spoon it over before serving.
One tip
The panna cotta should wobble when you move the glass. If it stands firm, that was too much gelatine.
