In northern India rajma chawal is what pasta with tomato sauce is here: the dish that always works. Tinned kidney beans make it a half-hour job.

- 200 gKidney beans, drained
- 150 gTinned tomatoes
- 60 gOnion
- 10 gGinger
- 15 gCanola oil (1 tbsp)
- 70 gRice, raw
- Garam masala, cumin, turmeric, garlic, coriander, salt
How to make it
- Cook the rice. Fry the onion, ginger and garlic golden in the oil.
- Toast the cumin, turmeric and garam masala briefly, add the tomatoes and reduce for five minutes.
- Add the beans and 150 ml of water, simmer for 15 minutes, crushing a few beans with the spoon so the sauce binds.
- Salt it and serve with coriander and the rice.

The crushed beans are the difference between beans in sauce and rajma.
