Risotto is not a hard dish, only one you stay with: stock by the ladle, stir, wait, more stock. After twenty minutes the rice is creamy and still has bite.

- 160 gRisotto rice
- 300 gChicken breast
- 150 gPeas
- 80 gCarrot
- 80 gOnion
- 100 mlWhite wine
- 700 mlChicken stock
- 40 gParmesan, grated
- 20 gButter
- 10 gOlive oil (1 tbsp)
- Parsley, salt, pepper
How to make it
- Fry the diced chicken in the oil and take it out. Soften the finely diced onion and carrot in half the butter, add the rice, stir until glassy.
- Deglaze with the wine, then add hot stock by the ladle, stirring until it is absorbed, twenty minutes.
- Add the chicken and peas for the last five minutes, stir in the rest of the butter and the Parmesan, serve with parsley.
One tip
The risotto should flow slowly on the plate. A splash of stock at the end if it is too firm.
