Salmon with pasta does not have to swim in cream. Olive oil, lemon and basil are enough, and the fish stays the lead.

Ingredients

  • 90 gTagliatelle, dry weight
  • 130 gSalmon fillet
  • 15 gOlive oil (1.5 tbsp)
  • 15 gParmesan, grated
  • Lemon, basil, garlic, salt, pepper

How to make it

  1. Cook the pasta, keeping a cup of the cooking water.
  2. Cut the salmon into pieces, salt it, fry it in half the oil for three minutes, turning once. Take it out.
  3. The rest of the oil, the garlic and the lemon zest into the pan, add the pasta and a splash of the water, toss.
  4. Salmon on top, then lemon juice, pepper, basil and Parmesan.

One tip

The salmon is fried in pieces, not as a whole fillet. That way every piece gets a crust and stays translucent inside.
