Salmon with pasta does not have to swim in cream. Olive oil, lemon and basil are enough, and the fish stays the lead.

- 130 gSalmon fillet
- 15 gOlive oil (1.5 tbsp)
- 15 gParmesan, grated
- Lemon, basil, garlic, salt, pepper
How to make it
- Cook the pasta, keeping a cup of the cooking water.
- Cut the salmon into pieces, salt it, fry it in half the oil for three minutes, turning once. Take it out.
- The rest of the oil, the garlic and the lemon zest into the pan, add the pasta and a splash of the water, toss.
- Salmon on top, then lemon juice, pepper, basil and Parmesan.
One tip
The salmon is fried in pieces, not as a whole fillet. That way every piece gets a crust and stays translucent inside.
