- 20 gButter
- 20 gPlain flour
- 120 gCheddar, grated
- 30 gParmesan, grated
- Mustard, nutmeg, salt, pepper
How to make it
- Cook the pasta in salted water, a minute less than the packet says, and drain it.
- Melt the butter in the pot, stir in the flour, cook for a minute, add the milk bit by bit and bring to the boil until the sauce thickens.
- Off the heat, stir in the Cheddar and Parmesan until melted. Season with mustard, nutmeg, salt and pepper.
- Fold in the pasta and eat straight away.
One tip
Never boil the cheese or the sauce turns grainy. Off the heat, then stir it in.
