A burrito without meat that still fills you up: rice and beans are the base, and the fried vegetables and avocado are the reason to eat it.

- 70 gWheat tortilla, large (1 piece)
- 40 gRice, raw
- 100 gBlack beans, drained
- 60 gPeppers
- 60 gCourgette
- 40 gSweetcorn
- 50 gAvocado (½ piece)
- 30 gSalsa (2 tbsp)
- 5 gCanola oil (1 tsp)
- Cumin, lime, coriander, salt
How to make it
- Cook the rice. Fry the pepper and courgette strips in the oil for five minutes, warm the beans, sweetcorn and cumin through briefly, salt it.
- Warm the tortilla in a pan.
- Rice, vegetables, sliced avocado, salsa and coriander into the middle, fold in the sides, roll it up tightly.
- Fry it briefly seam side down.
One tip
Wrapped in foil the burrito keeps until lunchtime and can be eaten on the move.
