A burrito without meat that still fills you up: rice and beans are the base, and the fried vegetables and avocado are the reason to eat it.

Ingredients

  • 70 gWheat tortilla, large (1 piece)
  • 40 gRice, raw
  • 100 gBlack beans, drained
  • 60 gPeppers
  • 60 gCourgette
  • 40 gSweetcorn
  • 50 gAvocado (½ piece)
  • 30 gSalsa (2 tbsp)
  • 5 gCanola oil (1 tsp)
  • Cumin, lime, coriander, salt

How to make it

  1. Cook the rice. Fry the pepper and courgette strips in the oil for five minutes, warm the beans, sweetcorn and cumin through briefly, salt it.
  2. Warm the tortilla in a pan.
  3. Rice, vegetables, sliced avocado, salsa and coriander into the middle, fold in the sides, roll it up tightly.
  4. Fry it briefly seam side down.

One tip

Wrapped in foil the burrito keeps until lunchtime and can be eaten on the move.
