The recipe for the bananas nobody wants to eat any more: the browner the better. The loaf is moist, keeps three days, and a slice is a snack for the road.

- 300 gBananas, very ripe (3 piece)
- 200 gPlain flour
- 120 gEggs (2 piece)
- 80 gButter, melted
- 80 gSugar
- 8 gBaking powder (2 tsp)
- 60 gWalnuts
- Cinnamon, vanilla, a pinch of salt
How to make it
- Oven to 175 degrees. Grease a loaf tin.
- Mash the bananas with a fork and mix with the eggs, butter, sugar and vanilla.
- Mix the flour, baking powder, cinnamon and salt and stir them in only until no flour is visible. Fold in the roughly chopped walnuts.
- Into the tin, bake for 55 minutes, until a skewer comes out clean.
- Ten minutes in the tin, then cool on a rack.
One tip
Halve the sugar and with very ripe bananas you will barely notice.
