A burrito is a whole meal in a tortilla: meat, beans, rice, cheese. Rolled tightly it becomes lunch for the office, cut open it becomes dinner.

Ingredients

  • 70 gWheat tortilla, large (1 piece)
  • 120 gMinced beef
  • 60 gBlack beans, drained
  • 40 gRice, raw
  • 30 gCheddar, grated
  • 40 gTomato
  • 30 gSalad leaves
  • 30 gRed onion
  • 30 gSalsa (2 tbsp)
  • Cumin, paprika, chilli, salt

How to make it

  1. Cook the rice. Brown the mince in a dry pan, season with cumin, paprika, chilli and salt, warm the beans through with it.
  2. Warm the tortilla in the pan for 30 seconds a side so it rolls.
  3. Rice, mince with beans, cheese, tomato, onion, salad and salsa into the middle, leaving a strip clear at the edge.
  4. Fold in the sides and roll it up tightly from the bottom.
  5. Seam side down in the pan for a moment, and it holds.

One tip

Less filling than you think: an overfilled burrito will not close.
