Lean beef in strips, seared hard, with peppers and onion. Over forty grams of protein from a cut that carries barely any fat, because it comes from the leg.
Ingredients
Forserving
- 150 gbeef topside, in strips
- 150 gPeppers
- 70 gRice, dry weight
- 30 gRed onion
- 10 gOlive oil (1 tbsp)
- Soy sauce, pepper, garlic
How to make it
- Cook the rice as it says on the packet.
- Cut the beef into thin strips, across the grain. Peppers into strips, onion into wedges.
- Get the oil very hot. Lay the beef in one layer, leave it for a minute, then turn it and take it out.
- Fry the peppers and onion in the same pan for three minutes. Beef back in, add the soy sauce and pepper, toss for a minute. Serve with the rice.
One tip
Cutting across the grain is the whole trick. Cut along it and even the best beef turns chewy.
