Weekend pancakes, only without a packet mix. Flour, egg, milk, baking powder, done. The blueberries go straight into the batter, so they bleed a little as they cook.
Ingredients
Forserving
- 100 gPlain flour
- 60 gEgg (1 piece)
- 150 mlMilk
- 5 gBaking powder (1 tsp)
- 10 gSugar (2 tsp)
- 80 gBlueberries
- 10 gButter
- 20 gMaple syrup (1 tbsp)
How to make it
- Mix the flour, baking powder, sugar and a pinch of salt. Beat the egg and milk and stir them in until no lumps are left.
- Fold half the blueberries into the batter.
- Melt the butter in the pan, a ladle of batter at a time, cook over medium heat until bubbles rise, then flip.
- Stack them, the rest of the blueberries and the maple syrup on top.
One tip
Do not overmix: a few lumps in the batter make the pancakes lighter.
