- 150 gSweet potato
- 60 gQuinoa, raw
- 100 gChickpeas, drained
- 60 gEdamame
- 50 gRed cabbage
- 60 gBroccoli
- 30 gRadishes
- 15 gTahini (1 tbsp)
- 10 gLemon juice (2 tsp)
- 10 gOlive oil (1 tbsp)
- 5 gSesame seeds (1 tsp)
- Paprika, garlic, salt
- 20 gPomegranate seeds
How to make it
- Roast the diced sweet potato with the oil, paprika and salt at 200 degrees for 25 minutes, adding the chickpeas to the tray for the last ten.
- Cook the quinoa, and the broccoli and edamame in salted water for three minutes.
- Stir the tahini smooth with the lemon, garlic, salt and water.
- Everything in sections on the quinoa, red cabbage and radishes raw alongside, dressing and sesame over it.
- Pomegranate seeds over the top.
One tip
Roast sweet potato and chickpeas for the whole week. Everything else is different each day.
