Four things make the sauce: soy sauce, vinegar, garlic, bay. The chicken braises in it until the meat falls off the bone and the sauce turns thick. Rice alongside takes it all up.

- 40 mlSoy sauce
- 30 mlVinegar
- 80 gRice, raw
- 40 gOnion
- Garlic, bay leaf, whole peppercorns, a pinch of sugar
- 60 gRed pepper
How to make it
- Put the chicken in a pot with the soy sauce, vinegar, plenty of garlic, bay and peppercorns and marinate for 20 minutes.
- Add the onion, bring everything to the boil and braise covered for 30 minutes.
- Take the lid off, turn the heat up and reduce the sauce for ten minutes until it thickens and glazes the meat.
- Cook the rice and serve with the chicken and the sauce.
- Braise the pepper strips along for the last ten minutes.
One tip
Do not stir while the vinegar comes to the boil, or the sauce stays sharp. Only after the first boil.
