The noodle dish from Thailand that is sweet, sour and salty at once. Everything is cut ahead and ready, because at the wok only minutes count.

Ingredients

  • 80 gRice noodles, wide
  • 150 gPrawns, peeled
  • 60 gEgg (1 piece)
  • 60 gBean sprouts
  • 30 gSpring onion
  • 20 gPeanuts, chopped
  • 15 gSoy sauce (1 tbsp)
  • 10 gCanola oil (1 tbsp)
  • 15 gLime (½ piece)
  • 10 gSugar (2 tsp)
  • Garlic, chilli, tamarind paste to taste

How to make it

  1. Soak the rice noodles in warm water for 20 minutes, then drain. Stir the soy sauce, sugar, lime juice and chilli into a sauce.
  2. Get the oil very hot in the wok, fry the garlic and prawns for two minutes, push them to the side.
  3. Egg into the middle, stir it, let it set.
  4. Add the noodles and sauce, toss for two minutes until the noodles are soft.
  5. Fold in the sprouts and spring onion briefly, serve with peanuts and lime.

One tip

Tamarind gives the typical sourness. Without it, use more lime.
