The skewers from the street stall: chicken marinated in coconut milk and turmeric, grilled hard, with a peanut sauce you would happily eat with a spoon.

Ingredients

  • 200 gChicken breast
  • 30 gPeanut butter (2 tbsp)
  • 60 mlCoconut milk
  • 15 gSoy sauce (1 tbsp)
  • 10 gLime
  • 10 gHoney (2 tsp)
  • 10 gCanola oil (1 tbsp)
  • Garlic, ginger, turmeric, coriander, chilli

How to make it

  1. Cut the chicken into strips and marinate for 30 minutes with half the coconut milk, the turmeric, garlic, ginger and honey.
  2. For the sauce stir the peanut butter, remaining coconut milk, soy sauce, lime juice and chilli smooth, thinning with water if needed.
  3. Thread the meat onto wooden skewers.
  4. Fry them in hot oil or on the grill for three minutes a side.
  5. Serve with the peanut sauce and coriander.

One tip

Soak wooden skewers for 20 minutes, otherwise they burn in the pan.
