A whole fish looks like work and is not: fill the cavity, oil over it, into the oven. Orange makes it sweeter than lemon, rosemary does the rest.

Ingredients

  • 250 gwhole sea bass, cleaned (about 450 g, yields 250 g of fish) (1 piece)
  • 100 gOrange, sliced (1 piece)
  • 15 gOlive oil (1 tbsp)
  • Rosemary, garlic, coarse salt, pepper

How to make it

  1. Oven to 200 degrees. Salt the fish inside and out, fill the cavity with rosemary, garlic and two orange slices.
  2. Lay it in a dish, the rest of the orange slices on and around it, drizzle with oil.
  3. Roast for 25 minutes, until the dorsal fin pulls out easily.
  4. Lift the fish off the bone at the table and spoon the orange juices from the dish over it.

One tip

Roast potatoes go well alongside and can cook in the same dish at the same time.
