The creamy version: coconut milk rounds the dal out, tomato brings acidity. Red lentils need no soaking and are soft in 20 minutes.

Ingredients

  • 100 gRed lentils
  • 100 mlCoconut milk
  • 100 gTinned tomatoes
  • 50 gOnion
  • 10 gGinger
  • 10 gCanola oil (1 tbsp)
  • 200 mlVegetable stock
  • Curry powder, turmeric, garlic, coriander, salt

How to make it

  1. Soften the onion, ginger and garlic in the oil, toast the curry powder and turmeric briefly.
  2. Add the lentils, tomatoes and stock, bring to the boil, simmer gently for 15 minutes.
  3. Stir in the coconut milk, cook for five more minutes, then salt.
  4. Serve with coriander, and rice or flatbread.

One tip

A squeeze of lime at the end makes the dal fresher than you would expect.
