The creamy version: coconut milk rounds the dal out, tomato brings acidity. Red lentils need no soaking and are soft in 20 minutes.

- 100 mlCoconut milk
- 100 gTinned tomatoes
- 50 gOnion
- 10 gGinger
- 10 gCanola oil (1 tbsp)
- 200 mlVegetable stock
- Curry powder, turmeric, garlic, coriander, salt
How to make it
- Soften the onion, ginger and garlic in the oil, toast the curry powder and turmeric briefly.
- Add the lentils, tomatoes and stock, bring to the boil, simmer gently for 15 minutes.
- Stir in the coconut milk, cook for five more minutes, then salt.
- Serve with coriander, and rice or flatbread.
One tip
A squeeze of lime at the end makes the dal fresher than you would expect.
