Gyros is a question of spices: paprika, cumin, oregano, garlic. Chicken strips in all of that, seared hard, with potato wedges from the oven instead of the fryer.

How to make it
- Oven to 220 degrees fan. Potatoes into wedges, onto a tray with a third of the oil and salt, bake for 25 minutes.
- Cut the chicken into strips and mix with the paprika, cumin, oregano, garlic, salt and pepper.
- Grate the cucumber, squeeze it out, stir with the yoghurt, garlic and salt.
- Fry the chicken in the rest of the oil over high heat for six to eight minutes. Warm the pitta briefly. Chicken with lettuce, tomatoes and onion rings into the bread, tzatziki over it, potatoes alongside.
One tip
The spices go on the meat before frying, not after. They toast along and then it tastes of gyros.
