The vegan chilli that never has to answer where the meat went. Two kinds of beans bring the protein, sweetcorn the sweetness, cumin and chilli the rest. For two days.

- 100 gBlack beans, drained
- 400 gTinned tomatoes
- 80 gSweetcorn
- 100 gPeppers
- 60 gOnion
- 20 gTomato purée (1 tbsp)
- 15 gOlive oil (1 tbsp)
- 30 gTortilla chips
- Cumin, paprika, chilli, garlic, coriander, salt
How to make it
- Dice the onion and pepper, soften them in the oil for five minutes, toast the garlic and tomato purée briefly.
- Add the cumin, paprika and chilli, then deglaze immediately with the tomatoes.
- Add the beans and sweetcorn, simmer gently for 25 minutes until the chilli is thick. Salt it.
- Serve with coriander and tortilla chips.
One tip
A square of dark chocolate in the chilli sounds odd and rounds it out. Try it.
