In eastern Europe they are called syrniki: quark or cottage cheese, egg, a spoon of flour, nothing more. They are more little cakes than pancakes and carry a whole breakfast of protein.

- 220 gCottage cheese
- 60 gEgg (1 piece)
- 40 gPlain flour
- 10 gSugar (2 tsp)
- 10 gCanola oil (1 tbsp)
- 50 gRaspberries
- 30 gSoured cream (1 tbsp)
- Vanilla, a pinch of salt
- 40 gBlueberries
How to make it
- Push the cottage cheese through a sieve or mash it with a fork, then stir with the egg, sugar, vanilla and salt.
- Stir in the flour until you have a soft, shapeable dough.
- With floured hands shape small, thick rounds.
- Fry them in the oil over medium heat for three to four minutes a side until golden. Serve with berries and soured cream.
- Blueberries alongside the raspberries.
One tip
Do not turn the heat up: the rounds are thick and need time to cook through.
