The noodle dish from Sichuan: the sauce of peanut butter, soy sauce and chilli oil at the bottom, noodles on top, crisp mince on top of that. It is all stirred together at the table.

- 100 gMinced pork
- 20 gPeanut butter (1 tbsp)
- 20 gSoy sauce
- 5 gSesame oil (1 tsp)
- 10 gVinegar (2 tsp)
- 30 gSpring onion
- 10 gPeanuts, chopped
- Garlic, ginger, chilli oil, Sichuan pepper, a pinch of sugar
How to make it
- Cook the noodles. Stir the peanut butter, soy sauce, vinegar, sesame oil, chilli oil, sugar, garlic and three tablespoons of the noodle water together in the bowl.
- Fry the mince in a dry pan until crumbly and crisp, season with the ginger and a splash of soy sauce.
- Noodles onto the sauce, mince on top, peanuts, spring onion and Sichuan pepper over it, mix at the table.
One tip
Without Sichuan pepper the tingle is missing. Black pepper is no substitute, but not wrong either.
