Udon are Japan’s thickest noodles and the most forgiving in a pan: they do not go soft however long you toss them. Tofu and vegetables with them, soy sauce, done.

- 100 gUdon noodles, dried
- 150 gTofu, firm
- 80 gBroccoli
- 80 gPeppers
- 60 gCarrot
- 20 gSoy sauce
- 10 gSesame oil (2 tsp)
- 5 gSesame seeds (1 tsp)
- Ginger, garlic, a pinch of sugar
How to make it
- Cook the noodles as the packet says and rinse them.
- Fry the diced tofu golden in the sesame oil and take it out.
- Fry the broccoli, carrot and pepper with the ginger and garlic over high heat for four minutes.
- Add the noodles, tofu, soy sauce and sugar, toss for a minute, sesame over the top.
One tip
A spoon of peanut butter in the sauce makes the pan more filling.
