The batter goes into a searing hot pan and the oven does the rest. After twenty minutes there is a tall golden rim that sinks slowly once it is out. That is how it should be.

Ingredients

  • 200 gEggs (4 piece)
  • 80 gPlain flour
  • 160 mlMilk
  • 25 gButter
  • 150 gBlueberries
  • 15 gSugar (1 tbsp)
  • Lemon zest, icing sugar, pinch of salt

How to make it

  1. Heat the oven to 220 degrees with the iron pan inside.
  2. Blend the eggs, flour, milk, sugar, salt and lemon zest smooth.
  3. Butter into the hot pan, swirl it, pour in the batter, bake for twenty minutes and do not open the oven.
  4. Serve at once with the blueberries and icing sugar.

One tip

The pan must be genuinely hot. Otherwise the batter does not rise.
