Courgette holds a lot of water, which is why it goes soft fast in the oven. The Parmesan crumb keeps it crisp outside, and the ketchup makes it a snack.

- 50 gwhite breadcrumbs
- 20 gParmesan, grated
- 10 gOlive oil (1 tbsp)
- 20 gKetchup (1 tbsp)
- Salt, pepper, oregano
How to make it
- Heat the oven to 220 degrees. Cut the courgette into finger-thick sticks.
- Mix the crumbs with the Parmesan, oregano, salt and pepper. Pull the sticks through the beaten egg, then turn them in the crumbs.
- Drizzle with oil on the tray, bake for twenty minutes, turning once. Serve with ketchup.
One tip
Do not crowd the tray. Whatever touches will not go crisp.
