Spinach wilts in a hot pan in a minute, tomatoes burst in two. With garlic, oil and Parmesan this is a pasta that needs no recipe.

Ingredients

  • 90 gPenne, dry weight
  • 150 gSpinach leaves
  • 150 gCherry tomatoes
  • 15 gOlive oil (1.5 tbsp)
  • 20 gParmesan, grated
  • 10 gPine nuts
  • Garlic, salt, pepper, chilli

How to make it

  1. Cook the pasta, keeping a cup of the cooking water. Toast the pine nuts in a dry pan and take them out.
  2. Soften the garlic in the oil, add the halved tomatoes and fry for two minutes until they soften.
  3. Add the spinach for a minute, until it wilts. Salt, pepper, chilli.
  4. Pasta and a splash of the water in, toss, then Parmesan and pine nuts over the top.

One tip

Add the spinach in batches. All at once it is a mountain that does not fit the pan, and then it wilts anyway.
