Prawns are the fastest protein there is: two minutes a side and done. Peppers and peas come out of the same pan, and rice if you want a full meal.

- 150 gPrawns, peeled
- 150 gPeppers
- 80 gPeas, frozen
- 70 gRice, dry weight
- 10 gOlive oil (1 tbsp)
- Garlic, salt, pepper, chilli, spring onion
How to make it
- Cook the rice as it says on the packet. Add the peas for the last three minutes.
- Cut the peppers into strips, pat the prawns dry and salt them.
- Get the oil hot, fry the peppers for three minutes. Add the garlic and prawns, two minutes a side, until they are pink and curled.
- Fold in the peas, season with chilli and pepper, scatter the spring onion over. Serve with the rice.
One tip
Prawns are done as soon as they curl into a C. Curled into an O they have been in too long and turn rubbery.
