Real ramen broth simmers for hours. This version takes a good chicken stock and gives it depth in half an hour with miso, ginger, garlic and shiitake.

Ingredients

  • 700 mlChicken stock
  • 100 gegg noodles (ramen)
  • 150 gChicken thighs, boneless
  • 60 gEgg (1 piece)
  • 40 gShiitake
  • 30 gSpring onion
  • 20 gSoy sauce
  • 10 gMiso paste (2 tsp)
  • 3 gNori (1 sheet)
  • 5 gSesame oil (1 tsp)
  • 5 gSesame seeds (1 tsp)
  • Ginger, garlic, chilli oil to taste

How to make it

  1. Steep the stock with the ginger, garlic, shiitake and soy sauce for 30 minutes.
  2. Boil the egg for six and a half minutes, cool it, peel and halve it.
  3. Salt the chicken, fry it in the sesame oil for five minutes a side, then slice it.
  4. Cook the noodles as the packet says and drain them.
  5. Stir the miso smooth in a ladle of broth and return it to the pot without boiling it again.
  6. Noodles into the bowl, broth over them, then chicken, egg, shiitake, spring onion, nori and sesame.

One tip

Never boil miso, it loses most of what it brings.
