- 100 gSpaghetti, dry weight
- 20 gOlive oil (2 tbsp)
- 15 gGarlic (3 Zehen)
- 15 gParmesan, grated
- Chilli flakes, parsley, salt
How to make it
- Cook the spaghetti in well-salted water, keeping a cup of the cooking water.
- Slice the garlic thinly and let it turn golden in the oil over low heat for three minutes, not brown. Add the chilli.
- Pasta into the pan, a splash of the water, toss hard for a minute until the oil binds.
- Parsley and Parmesan over the top.
One tip
Brown garlic is bitter. As soon as it is golden the pasta goes in, and that cools the pan.
