Peanut butter, soy sauce and lime make a sauce in one minute that clings to everything. The tofu is fried crisp first, and the vegetables keep their bite.

Ingredients

Forserving
  • 200 gTofu, firm
  • 100 gBroccoli
  • 80 gPeppers
  • 60 gCarrot
  • 25 gPeanut butter (1 tbsp)
  • 20 gSoy sauce
  • 10 gLime
  • 10 gCanola oil (1 tbsp)
  • 70 gRice, raw
  • Ginger, garlic, chilli

How to make it

  1. Cook the rice. Whisk the peanut butter, soy sauce, lime juice, chilli and three tablespoons of water into a sauce.
  2. Fry the diced tofu golden all over in the hot oil, take it out.
  3. Fry the broccoli, pepper and carrot with the ginger and garlic over high heat for four minutes.
  4. Tofu back in, sauce over it, toss for a minute, serve with the rice.

One tip

The sauce thickens fast. If it stiffens, add a splash of water.
