Poke without fish lives on colour and bite: beetroot, red cabbage, edamame, peas. Quinoa instead of rice brings more protein to the bowl.

- 70 gAvocado (½ piece)

- 15 gSoy sauce (1 tbsp)
- 5 gSesame oil (1 tsp)
- 5 gSesame seeds (1 tsp)
How to make it
- Rinse the quinoa and cook it in twice its volume of salted water for 15 minutes, adding the peas and edamame for the last three.
- Finely shred the red cabbage, dice the beetroot and avocado.
- Everything in sections on the quinoa, soy sauce and sesame oil over it, sesame on top.
One tip
Work the red cabbage with a little salt and vinegar for ten minutes and it softens and sweetens.
